The book Fundamentals of Food Service Management focuses on the basic knowledge and skills required for operating the Food Service Industry. It emphasises the hospitality industry that provides catering service, styles and techniques of food and beverage operations and food production unit. This book has three chapters. Chapter one deals with the hotel industry, entertainment venues and food service industry. Chapter two is about the catering establishments, catering service equipment, service preparation, menu and techniques of services. Chapter three describes the kitchen operations, food safety and resource management in the food service industry. This book will serve as a guide for the beginners in the field of Catering Technology, Hospitality Industry and Applied Science in the Technical and Vocational Colleges and Universities.
The hospitality and catering industry suffers from a decreasing workforce, not sufficiently well qualified to meet the needs of a growing industry which already contributes significantly to the economic wealth of nations. The study arises out of the above need and ultimately seeks to address the complex question of how the hospitality and catering industry came to be in the position it is in and further, how we might move to a better future. This research study is mainly focussing on five themes. Firstly, identify the trends in relation to the number of qualified students entering the hospitality industry. Secondly, study of the perception and image of the hospitality industry amongst young people, parents and career advisers. Thirdly, examine the perception of the industry's role in the delivery of Vocational Education and Training in the hospitality and catering industry. Fourthly, compare the standard of Vocational Education and Training system with six similar European and Anglophone countries. Finally, indicate the ways in which the quality of the curriculum for the hospitality and catering industry can be improved, especially in terms of vocational and professional skills.
Early Childhood Development Education involves giving educational foundation to children aged eight years and below. This foundation should be holistic: catering for cognitive, linguistic, physical and moral well being of the child. During this period of growth, the child is under care of the parent and the teacher. The training of the teacher as a caregiver should prepare and equip the teacher with the vocational and practical knowledge and skills to ensure the expected all-round development of the child. This work analyses the ECDE policy, programmes and ECDE teacher training in Kenya to find out their effectiveness towards achieving holistic development as a central goal of ECDE.
This book looked at technical/vocational skills acquisition and poverty reduction strategies in institutions in Nigeria. This book revealed that automobile engineering, catering, building trade, electrical installation, computer craft practice, fine arts, clothing and textile and agricultural science are the types of programmes studied in Nigeria. The relevance of vocational skills offered in institutions toward poverty reduction include: to produce business managers, prepare students for occupational fields for effective participation in the world of works, introduce students to technical skills, expose students to career awareness and options in the world of work, and expose students to complexity of technology. The vocational programmes offered in technical institutions to reduce poverty among school leavers are; technical craft to earn a living, agricultural and commercial skills, training for self relevance, and for graduates to be able to set up their own business. The employment prospects of the graduates of technical/vocational institutions in Nigeria for poverty reduction are to secure employment in Agricultural establishment, secure employment in automobile companies,etc.
